What Brewing Calculators Cannot See
Homebrew calculators are good at arithmetic and blind to almost everything else. Knowing which of their assumptions your brew day breaks is what makes them useful rather than merely reassuring.
They assume you hit your volume
Every concentration figure — gravity, IBU, SRM — divides by batch volume. Boil-off varies with kettle geometry, burner output, humidity and how vigorously you boil, and it is the single most common reason a batch misses its numbers.
Measure the volume you actually collect, with a marked stick, and feed that back into the calculations rather than the planned figure.
They assume a mash efficiency you did not tell them
Gravity depends on how much sugar you extract from the grain, which depends on crush, mash time, pH, sparge technique and your system. Two brewers with identical grain bills routinely land several points apart.
Efficiency is personal and stable: measure it over a few batches and use your own figure. A recipe designed at 75% brewed on a 65% system comes out noticeably weak.
The alpha acid on the packet is a snapshot
Hop alpha acid varies by harvest and lot and falls in storage, faster when warm or oxygen-exposed. The IBU calculation can only use the number you give it.
Use the figure on the packet in front of you, and treat year-old hops kept at room temperature as weaker than their label. This is the largest uncontrolled variable in any bitterness estimate.
Bitterness models disagree with each other
Tinseth, Rager and Garetz return meaningfully different IBUs for the same recipe, and none is authoritative. Utilisation also depends on things none of them model — whirlpool time, hop form, kettle geometry.
Use one consistently and calibrate against taste. An IBU figure is most valuable as a comparison between your own batches, not as an absolute.
Refractometers lie once fermentation starts
Worth repeating because it produces confident wrong answers rather than obvious ones. Alcohol refracts differently from sugar, so a post-pitch Brix reading does not convert cleanly to gravity — and a bad FG makes the ABV and attenuation wrong too.
The converter is for unfermented wort. Final gravity belongs to a hydrometer.
Colour saturates, and the model is a fit
The Morey equation is an empirical fit that is least reliable at the dark end, and it cannot see kettle caramelisation, boil length or oxidation. Above about 40 SRM the eye cannot distinguish beers anyway.
Treat SRM as accurate to a few units, which is all the precision the number can carry.
Your mash tun is not in the formula
The strike water calculation accounts for grain and water only. A cold tun can absorb several degrees on the first mash of the day.
Preheat it, or measure your own correction over a few batches and apply it. Either is fine; guessing differently each time is not.
What they are genuinely good for
Getting you close before you start, and telling you which direction you missed in afterwards. A calculator will not brew a good beer, and it will stop you designing an impossible one — and combined with a notebook of what actually happened, it converts brewing from repetition into something you can steer.
